Next stage of the masterplan is to try to grow some of our own veg this year. This seems to be a much more time-intensive activity than keeping chickens so we'll see how that goes. Having said that, it's amazing how much time can disappear as we sit and watch the girls!
Back to the challenge... The theme this month is Everyday Easy which sounds simple enough. I have a much loved copy of River Cottage Everyday and we cook from it quite often. But none of the meals we like to cook really seemed to fit the theme in that they really could be cooked on a weeknight with minimal fuss. Until my husband was looking for something to use up some of the eggs from our very consistent layers and came across the onion frittata on page 109. I looked for a recipe online but could only find these slightly different frittatas in Hugh's column, along with some other eggy recipes.
This was a doddle to make, and really tasty, but I have to admit it photographs terribly! Sorry about that. Not sure if it is down to my lack of skill or the fact it is basically an omelette and so lacks any visual interest by definition. But I would definitely recommend trying it for a quick meal. Thanks to Jo at Jo's Kitchen for hosting this, looking forward to seeing what other River Cottage delights people have been trying.

I have chicken envy!! I've always wanted chickens, but the husband has consistently vetoed the idea. Foxes, holiday cover, chicken mess around the garden, and the risk that our huge cat might snack on one of them all means that I'm not allowed. sniffle.

ReplyDeleteJohn and I have been trying to branch out with our cooking. You've almost inspired me to get this book. Next time we're at your house I'll ask to see it to see if there really are lots of tasty recipes!
